Seared Salmon Fillet with Roasted Asparagus and Cauliflower Rice
Pan-seared wild salmon served over fluffy cauliflower rice with oven-roasted asparagus, finished with a squeeze of fresh lemon and fragrant dill.
INGREDIENTS
5.5 ounces Wild Sockeye Salmon
1 cup Asparagus spears
1 cup Cauliflower rice
1 teaspoon Extra Virgin Olive Oil
1 clove Garlic, minced
1 tablespoon Lemon juice
1 tablespoon Fresh dill, chopped
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the asparagus spears with half of the olive oil and a pinch of salt and pepper, then roast for 12-15 minutes until tender.
Season the salmon fillet with salt, pepper, and the minced garlic.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until the fish is golden and flakes easily with a fork.
Remove the salmon from the pan and quickly sauté the cauliflower rice in the same skillet for 3-4 minutes until just tender.
Plate the cauliflower rice and top with the seared salmon and roasted asparagus.
Drizzle with fresh lemon juice and garnish with chopped fragrant dill before serving.
