2.5 cups Cauliflower florets
1.5 cups Green beans
1 tbsp Extra virgin olive oil

PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until they are very tender, approximately 10 to 12 minutes.
While the cauliflower is steaming, heat half of the olive oil in a large non-stick skillet over medium-high heat.
Season the salmon with salt and pepper, then place it in the skillet skin-side up and sear for 4-5 minutes until golden.
Flip the salmon and cook for another 3-4 minutes until the skin is crisp and the fish is cooked through, then remove from the pan and set aside.
In the same skillet, add the remaining olive oil, green beans, and minced garlic, sautéing for 5-6 minutes until the beans are tender-crisp.
Place the steamed cauliflower into a blender or food processor with the nutritional yeast and a pinch of salt, blending until a smooth, velvety mash forms.
Plate the cauliflower mash first, top with the seared salmon fillet, and serve the garlic green beans alongside.
