INGREDIENTS
6 oz Wild Atlantic Salmon
300g Cauliflower florets
100g Fresh Green Beans
2 tbsp Nonfat Greek Yogurt
1 tsp Ghee
1 tsp Avocado Oil
1 clove Garlic
PREPARATION
Place the cauliflower florets and the garlic clove in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Add the green beans to the steamer during the last 5 minutes of cooking until they are bright green and crisp-tender.
While vegetables steam, pat the salmon dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat avocado oil in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes, then flip and cook for another 2-3 minutes until desired doneness.
Transfer the steamed cauliflower and garlic to a blender or food processor, add the Greek yogurt and ghee, and pulse until smooth and creamy.
Plate the garlic cauliflower mash, top with the seared salmon, and serve the steamed green beans on the side.
