Bacon and Cheddar Stuffed Potatoes
Oven-roasted Russet potatoes stuffed with savory ground turkey and crispy bacon, topped with sharp melted cheddar for a satisfying, velvety finish.
INGREDIENTS
0.75 medium Russet potato
4.8 oz Ground turkey
0.5 slice Sugar-free bacon
0.25 oz Sharp cheddar cheese
3 tbsp Non-fat Greek yogurt
1 tbsp Green onions
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
PREPARATION
Preheat oven to 400°F and prick the potato with a fork, then bake for 45-50 minutes until tender.
While potato bakes, cook bacon in a skillet until crispy, then remove and chop into small bits.
In the same skillet, brown the ground turkey with sea salt, black pepper, and garlic powder until fully cooked.
Slice the baked potato lengthwise and scoop out most of the flesh into a bowl, leaving a thin shell.
Mash the potato flesh with Greek yogurt, then stir in the cooked turkey and half of the bacon bits.
Stuff the mixture back into the potato skins and top with shredded cheddar cheese and the remaining bacon.
Return to the oven for 5 minutes until the cheese is bubbly and golden.
Garnish with sliced green onions before serving.
