Seared Salmon with Garlic Green Beans and Mashed Sweet Potato
Pan-seared salmon served with garlic-infused green beans and creamy mashed sweet potatoes, finished with a squeeze of fresh lemon and a sprinkle of flaky sea salt.
INGREDIENTS
6 oz Wild Atlantic Salmon fillet
150g Sweet Potato, peeled and cubed
100g Fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
1 clove Garlic, minced
Salt, pepper, and lemon wedges for serving
PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook for 10-12 minutes until fork-tender.
Drain the sweet potatoes and mash them thoroughly with the ghee and a pinch of salt until smooth.
While potatoes cook, season the salmon fillet with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan, skin-side down, and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached, then remove from the pan.
In the same skillet, add the green beans and minced garlic, sautéing for 3-4 minutes until the beans are bright green and slightly blistered.
Plate the mashed sweet potatoes alongside the garlic green beans and the seared salmon.
Finish with a squeeze of fresh lemon juice over the fish.
