Seared Beef Strips with Garlic Green Beans and Sweet Potato Mash
Pan-seared sirloin strips paired with a creamy sweet potato mash and garlic-sautéed green beans, finished with a sprinkle of flaky sea salt.
INGREDIENTS
6.5 oz Lean Top Sirloin Beef
150g Sweet Potato
1 cup Green Beans
1 tsp Avocado Oil
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water for 10-12 minutes until tender.
Drain the sweet potato and mash thoroughly with a pinch of salt and pepper until smooth.
Trim the ends of the green beans and mince the garlic cloves.
Heat half of the avocado oil in a skillet over medium heat, add the green beans and garlic, and sauté for 5 minutes until crisp-tender.
Remove the beans from the skillet and set aside.
Slice the sirloin into thin strips and season with salt and pepper.
Increase skillet heat to medium-high, add the remaining oil, and sear the beef strips for 2 minutes per side until a golden crust forms.
Plate the beef alongside the mash and green beans, serving immediately while hot.
