PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook for 10 to 12 minutes until fork-tender.
While the potatoes boil, place the green beans in a steamer basket over simmering water and steam for 5 to 7 minutes until bright green and crisp-tender.
Pat the salmon filet completely dry with a paper towel and season both sides with sea salt and black pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the skillet skin-side up and sear for 4 minutes, then flip and cook for another 3 to 4 minutes until the desired doneness is reached.
Drain the sweet potatoes and mash them thoroughly with half of the lemon juice until fluffy and smooth.
