Pan-seared chicken breast simmered in a rich, velvety cocoa-infused mole sauce and finished with a sprinkle of nutty toasted sesame seeds.
INGREDIENTS
5 oz Chicken breast
1 tsp Olive oil
0.25 cup Yellow onion
1 clove Garlic
0.25 cup Tomato puree
0.5 cup Chicken broth
2 tsp Almond butter
1 tbsp Unsweetened cocoa powder
1 tsp Chili powder
0.25 tsp Ground cinnamon
1.5 cup Cauliflower rice
1 tsp Sesame seeds
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Season the chicken breast with half of the sea salt and black pepper.
Heat olive oil in a skillet over medium-high heat and sear the chicken until golden and cooked through, then set aside.
In the same skillet, sauté the diced yellow onion and garlic until translucent and fragrant.
Stir in the tomato puree, chicken broth, almond butter, cocoa powder, chili powder, ground cinnamon, and the remaining salt and pepper.
Simmer the sauce for 5 minutes until thickened, then return the chicken to the pan to coat thoroughly.
In a separate pan or microwave, steam the cauliflower rice until tender.
Serve the chicken and mole sauce over the cauliflower rice and garnish with toasted sesame seeds.
