Pan-Seared Salmon with Lemon-Herb Arugula
Crispy pan-seared salmon fillet served over a bed of zesty lemon-herb arugula and juicy cherry tomatoes for a vibrant, nutrient-dense meal.
INGREDIENTS
7 oz Wild-caught salmon fillet
2 cup Arugula
0.5 cup Cherry tomatoes
1 tbsp Extra virgin olive oil
1 tbsp Lemon juice
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Fresh dill
1 tsp Fresh parsley
1 tsp Capers
PREPARATION
Pat the wild-caught salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat half of the extra virgin olive oil in a stainless steel or cast-iron skillet over medium-high heat until shimmering.
Place the salmon in the pan skin-side down and sear for 4 to 5 minutes until the skin is crispy and releases easily.
Flip the fillet and cook for another 2 to 3 minutes until the salmon is opaque and flakes easily with a fork.
In a small bowl, whisk together the remaining olive oil, lemon juice, chopped fresh dill, and chopped fresh parsley.
In a large bowl, toss the fresh arugula, halved cherry tomatoes, and capers with the prepared lemon-herb dressing.
Transfer the dressed arugula salad to a plate and top with the warm pan-seared salmon fillet.
