While the vegetables roast, place the chopped kale in a serving bowl and drizzle with lime juice, then massage the leaves with your hands for 1 minute until they soften and turn dark green.
Warm the black beans in a small saucepan or microwave until heated through.
Assemble the bowl by adding the roasted sweet potatoes, seitan, and warm black beans to the massaged kale.
Garnish the bowl with nutritional yeast and hemp seeds before serving.
