Seared Salmon Fillet with Steamed Green Beans and Sweet Potato Mash
Pan-seared salmon served over a velvety sweet potato mash with a side of crisp-tender green beans, finished with a bright squeeze of lemon.
INGREDIENTS
6 oz Salmon Fillet
90g Sweet Potato
100g Green Beans
1 tsp Extra Virgin Olive Oil
1 tsp Lemon Juice
Pinch of Sea Salt and Black Pepper
PREPARATION
Peel and cube the sweet potato, then boil in a small pot of salted water for 10-12 minutes until tender.
While the potato boils, place a steamer basket over another pot of simmering water and steam the green beans for 5-6 minutes until crisp-tender.
Pat the salmon fillet completely dry with a paper towel and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4 minutes, then flip and cook for another 3-4 minutes until the center is just opaque.
Drain the sweet potatoes and mash them thoroughly with a fork or masher until smooth and velvety.
Plate the sweet potato mash, top with the seared salmon, and serve the green beans on the side with a fresh squeeze of lemon juice.
