PREPARATION
Preheat your oven to 375°F (190°C).
Heat the extra virgin olive oil in a small skillet over medium heat and sauté the diced onion and red bell pepper until softened.
In a medium bowl, toss the shredded chicken breast with half of the sautéed vegetables and two tablespoons of the tomato puree.
Prepare the sauce by whisking the remaining tomato puree with chili powder, ground cumin, garlic powder, sea salt, and black pepper in a small bowl.
Warm the corn tortillas in a dry pan for 30 seconds per side until they are soft and pliable.
Place a portion of the chicken filling into each tortilla, roll them up tightly, and arrange them seam-side down in a small baking dish.
