PREPARATION
Peel and cube the Yukon Gold potato, then place in a pot of cold salted water.
Bring the water to a boil and cook the potato until fork-tender, approximately 15 minutes.
While the potato boils, season the chicken breast with half of the sea salt and black pepper.
Heat the olive oil in a skillet over medium-high heat and sear the chicken for 6 to 7 minutes per side until the internal temperature reaches 165°F.
