Preheat your oven to 400°F (200°C).
Scrub the potato clean and pierce it several times with a fork, then rub the skin with olive oil, sea salt, and black pepper.
Place the potato directly on the oven rack and bake for 45 to 50 minutes until the skin is crisp and the center is tender.
While the potato bakes, cook the bacon in a skillet over medium heat until crispy, then remove to a paper towel to drain and crumble into bits.
In the same skillet, brown the ground turkey with garlic powder over medium-high heat until fully cooked and no longer pink.
Once the potato is done, slice it in half lengthwise and carefully scoop the flesh into a mixing bowl, leaving a thin shell of potato against the skin.
Mash the potato flesh together with the cooked ground turkey, half of the bacon crumbles, and half of the cheddar cheese.
Spoon the mixture back into the potato skins, top with the remaining cheddar cheese, and place under the broiler for 2 minutes until the cheese is bubbly.
Garnish the stuffed potatoes with a dollop of Greek yogurt, the remaining bacon crumbles, and sliced green onions before serving.
