PREPARATION
Preheat oven to 400°F and bake the Russet potato for 45-50 minutes until the center is tender.
While the potato bakes, brown the ground turkey in a skillet over medium heat until fully cooked and no longer pink.
Stir in the tomato puree, chili powder, cumin, garlic powder, sea salt, and black pepper, then simmer for 5 minutes.
Slice the baked potato in half lengthwise, scoop out most of the flesh leaving a thin layer, and brush the skins with olive oil.
Roast the skins for 10 minutes until crisp, then fill the cavities with the turkey chili and top with shredded cheddar.
Return to the oven for 2-3 minutes until the cheese is melted and bubbling.
