Preheat oven to 400°F and line a baking sheet with parchment paper.
In a skillet over medium heat, add avocado oil, ground turkey, grated ginger, and minced garlic, sautéing until the turkey is browned and crumbly.
Add the finely diced potatoes, peas, curry powder, garam masala, sea salt, and black pepper to the skillet with two tablespoons of water.
Cover the skillet and simmer for 5-7 minutes until the potatoes are tender and the water has evaporated.
Cut the whole wheat tortilla into four wide strips.
Place a spoonful of the turkey and potato mixture at one end of a strip and fold into a triangle shape, securing the final edge with a dab of water.
Place the samosas on the prepared baking sheet and bake for 10-12 minutes until the edges are golden and crisp.
While the samosas bake, whisk together the Greek yogurt, chopped mint, and cilantro in a small bowl to create the chutney.
Serve the warm samosas immediately with the cooling mint yogurt chutney for dipping.
