Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served over a creamy garlic cauliflower mash with crisp-tender steamed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Green Beans
1.5 tsp Extra Virgin Olive Oil
1 tbsp Non-fat Plain Greek Yogurt
1 clove Garlic, minced
1 tsp Fresh Lemon Juice
PREPARATION
Steam the cauliflower florets and minced garlic in a steamer basket over boiling water until very tender, about 10-12 minutes.
While cauliflower steams, add the green beans to the same steamer basket for the last 5 minutes of cooking until they are crisp-tender.
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat 0.5 teaspoon of olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes until crispy.
Flip the salmon and cook for another 2-3 minutes until the internal temperature reaches 145 degrees Fahrenheit.
Transfer the steamed cauliflower and garlic to a blender or food processor, add the Greek yogurt and remaining 1 teaspoon of olive oil, and pulse until smooth and creamy.
Serve the seared salmon over the garlic cauliflower mash with the steamed green beans on the side, finishing with a fresh squeeze of lemon juice.
