Buffalo Chicken and Cauliflower Bake
Tender chicken and cauliflower florets roasted in a zesty buffalo glaze, served with a creamy and tangy blue cheese dipping sauce.
INGREDIENTS
5 oz Chicken breast
2 cups Cauliflower florets
1 tsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
2 tbsp Buffalo hot sauce
1 tsp Ghee
0.25 cup Plain Greek yogurt
1 tbsp Blue cheese crumbles
1 tsp Fresh chives
PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Cut the chicken breast and cauliflower into uniform, bite-sized pieces for even cooking.
In a large bowl, toss the chicken and cauliflower with olive oil, sea salt, black pepper, and garlic powder until well coated.
Spread the mixture in a single layer on the prepared baking sheet and roast for 20 to 25 minutes, or until the chicken is cooked through and the cauliflower is tender.
While roasting, whisk together the buffalo hot sauce and melted ghee in a small bowl.
In a separate small ramekin, stir together the Greek yogurt and blue cheese crumbles to create the dip.
Once the bake is finished, transfer the chicken and cauliflower to a bowl and toss with the buffalo-ghee mixture.
Plate the buffalo chicken and cauliflower, garnish with fresh chives, and serve with the blue cheese dip on the side.
