Preheat your oven to 400°F.
In a small mixing bowl, combine the cottage cheese, cream cheese, chopped spinach, parmesan cheese, and minced garlic until well incorporated.
Place the chicken breast on a cutting board and use a sharp knife to slice a horizontal pocket into the side of the breast, being careful not to cut all the way through.
Carefully spoon the cheese and spinach mixture into the pocket of the chicken and secure the opening with two or three toothpicks.
Season both sides of the stuffed chicken breast with the sea salt, black pepper, and garlic powder.
Heat the olive oil in a large oven-safe skillet over medium-high heat.
Once the oil is shimmering, add the chicken to the skillet and sear for 3 to 4 minutes until a golden crust forms, then carefully flip the breast.
Arrange the asparagus spears around the chicken in the skillet and season them with a pinch of salt.
Transfer the skillet to the preheated oven and roast for 10 to 12 minutes until the chicken is cooked through and the cheese filling is hot.
Remove the skillet from the oven and let the chicken rest for 3 minutes before removing the toothpicks and serving alongside the roasted asparagus.
