Finely chop the fresh spinach and fold it into the cheese mixture until well incorporated.
Carefully cut a horizontal pocket into the thickest part of the chicken breast, being careful not to cut all the way through.
Spoon the spinach and cheese filling into the pocket and secure the opening with two wooden toothpicks.
Season both sides of the stuffed chicken breast evenly with sea salt and black pepper.
Heat the extra virgin olive oil in an oven-safe skillet over medium-high heat.
Place the chicken in the skillet and sear for 3-4 minutes per side until a golden crust forms.
Transfer the skillet to the oven and bake for 12-15 minutes or until the internal temperature reaches 165°F.
While the chicken rests for 5 minutes, steam the broccoli florets until tender-crisp and serve alongside the chicken.
