Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon fillet served over nutty brown rice with crisp-tender garlic green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Salmon Fillet
1 cup cooked Brown Rice
1 cup Green Beans
1.5 tsp Avocado Oil
2 cloves Garlic
1/2 Lemon
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat half of the avocado oil in a large non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for about four minutes until the skin is golden and crispy.
Flip the fillet and cook for another three minutes or until the salmon is cooked to your preferred doneness.
Remove the salmon from the pan and set aside on a plate.
Add the remaining oil to the same skillet along with the trimmed green beans and minced garlic.
Sauté the beans for five minutes until they are bright green and crisp-tender.
Serve the salmon over a bed of warm brown rice with the garlic green beans on the side and a fresh squeeze of lemon juice.
