Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon and garlic green beans served over cauliflower mash, finished with a squeeze of fresh lemon and a sprinkle of flaky sea salt.
INGREDIENTS
7 oz Wild Atlantic Salmon
2 cups Cauliflower florets
1 cup Green beans
2 tsp Olive oil
2 cloves Garlic, minced
1 tbsp Lemon juice
Salt and black pepper to taste
PREPARATION
Steam the cauliflower florets until very tender, then mash or blend until smooth and season with salt and pepper.
Pat the salmon dry with a paper towel and season both sides with salt and pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until cooked through.
Remove the salmon from the pan and add the remaining teaspoon of olive oil along with the green beans and minced garlic.
Sauté the green beans for 5-7 minutes until tender-crisp and fragrant.
Plate the cauliflower mash, top with the salmon, and serve alongside the garlic green beans with a fresh lemon juice drizzle.
