Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon with crisp skin served over creamy mashed sweet potatoes and tender green beans sautéed with fragrant garlic.
INGREDIENTS
6 oz Salmon Fillet
150g Sweet Potato
100g Green Beans
1 tsp Ghee
1 tsp Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water until fork-tender, about 12 to 15 minutes.
While the potatoes cook, pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and place the salmon skin-side down, searing for 4 to 5 minutes until the skin is crisp.
Flip the salmon and cook for another 3 to 4 minutes until cooked through, then remove from the pan and set aside.
In the same skillet, add the green beans and minced garlic, sautéing for 5 minutes until the beans are tender-crisp and the garlic is aromatic.
Drain the sweet potatoes and mash them thoroughly with the ghee and a pinch of salt until smooth and creamy.
Serve the seared salmon over the sweet potato mash with the garlicky green beans on the side.
