Seared Salmon with Steamed Asparagus and Garlic Mashed Cauliflower
Pan-seared wild salmon served over creamy garlic mashed cauliflower with a side of tender steamed asparagus, finished with a squeeze of zesty lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Asparagus spears
1 tbsp Extra Virgin Olive Oil
2 tbsp Nonfat Greek Yogurt
2 cloves Garlic
PREPARATION
Steam the cauliflower florets and garlic cloves until very tender, about 10-12 minutes.
While cauliflower steams, trim the woody ends off the asparagus and steam them for 4-5 minutes until bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side up for 4 minutes, then flip and cook for another 3-4 minutes until cooked through.
Drain the steamed cauliflower and garlic, then mash or blend with the Greek yogurt until smooth and creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the asparagus on the side with a fresh lemon wedge.
