PREPARATION
Peel and cube the russet potato into one-inch pieces.
Place potato cubes in a pot of cold water with a pinch of sea salt and bring to a boil.
Simmer the potatoes for 12 to 15 minutes until they are fork-tender, then drain thoroughly.
While potatoes boil, season the chicken breast with half of the sea salt and black pepper.
Heat avocado oil in a skillet over medium-high heat and sear the chicken for 6 minutes per side until the internal temperature reaches 165 degrees Fahrenheit.
Mince the garlic cloves and finely chop the fresh chives.
Return the drained potatoes to the warm pot and add the ghee, Greek yogurt, minced garlic, and the remaining salt and pepper.
