PREPARATION
Heat a large non-stick skillet or wok over medium-high heat with half of the sesame oil.
Add the diced carrots and onions, sautéing for 3-4 minutes until the onions are translucent and carrots are slightly tender.
Stir in the minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
Push the vegetables to the side of the pan and pour in the whisked whole eggs and egg whites.
Scramble the eggs until just set, then incorporate them with the vegetables.
Add the cooked brown rice, tamari, sea salt, and black pepper, tossing everything together for 2 minutes to heat through.
