Herb-Crusted Salmon with Roasted Asparagus
Oven-roasted salmon fillet topped with a zesty herb crust, served alongside nutty brown rice and crisp-tender asparagus for a vibrant and nutrient-dense meal.
INGREDIENTS
6.5 oz Salmon fillet
0.25 cup Brown rice
1 cup Asparagus
0.5 tsp Olive oil
1 tbsp Dijon mustard
1 tsp Dried parsley
0.25 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 slice Lemon
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Prepare the brown rice according to package instructions and keep warm.
Trim the woody ends off the asparagus and place them on one side of the baking sheet. Drizzle with olive oil and a pinch of sea salt and black pepper.
In a small bowl, whisk together the Dijon mustard, dried parsley, garlic powder, and the remaining salt and pepper.
Place the salmon fillet on the other side of the baking sheet and spread the mustard-herb mixture evenly over the top of the fish.
Roast in the oven for 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus is crisp-tender.
Plate the salmon and roasted asparagus alongside the cooked brown rice, finishing with a fresh squeeze of lemon over the fish.
