Creamy Parmesan Mushroom Risotto
Arborio rice simmered with tender chicken and earthy mushrooms in a velvety parmesan broth for a savory and comforting finish.
INGREDIENTS
3.75 oz boneless skinless chicken breast
0.25 cup arborio rice
1 cup cremini mushrooms
1.5 cup low-sodium chicken broth
2 tbsp grated parmesan cheese
1 tsp extra virgin olive oil
0.25 cup yellow onion
1 clove garlic
0.25 tsp sea salt
0.25 tsp black pepper
1 tsp fresh parsley
PREPARATION
Cut the chicken breast into bite-sized pieces and season with a pinch of sea salt and black pepper.
Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until golden brown and cooked through, then remove and set aside.
In the same skillet, add the diced onion and sliced mushrooms. Sauté for 5 minutes until the mushrooms are browned and onions are translucent.
Add the minced garlic and arborio rice to the skillet, stirring for 1-2 minutes to lightly toast the rice grains.
Begin adding the chicken broth 0.5 cup at a time, stirring frequently. Wait until most of the liquid is absorbed before adding the next portion.
Continue this process until the rice is tender and creamy, which should take about 18-20 minutes.
Stir the cooked chicken back into the skillet along with the parmesan cheese, remaining salt, and pepper.
Garnish with fresh chopped parsley and serve immediately while warm.
