Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared wild salmon served with tender green beans and creamy garlic mashed cauliflower, finished with a squeeze of fresh lemon for a bright, zesty touch.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
1.5 cups Cauliflower Florets
1 cup Fresh Green Beans
1 tbsp Grass-fed Ghee
2 tbsp Nonfat Plain Greek Yogurt
1 clove Garlic, minced
Sea salt and black pepper to taste
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the trimmed green beans to the same steamer basket to cook until tender-crisp.
While the vegetables are steaming, pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat half of the ghee in a non-stick or cast-iron skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Transfer the steamed cauliflower to a bowl or food processor and add the minced garlic, the remaining ghee, Greek yogurt, and a pinch of salt and pepper.
Mash with a fork or pulse in the processor until the cauliflower reaches a smooth, creamy consistency.
Serve the seared salmon alongside the garlic mashed cauliflower and steamed green beans, finishing with an optional squeeze of fresh lemon.
