PREPARATION
Place the cubed sweet potato in a pot of boiling water and cook for 10-12 minutes until tender.
Drain the sweet potatoes and mash them until smooth, adding a pinch of sea salt if desired.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side up in the pan and sear for 4-5 minutes until a golden crust forms.
