Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon and garlicky green beans served with a bowl of sweet potato mash, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
7 oz Salmon Fillet
100g Sweet Potato
1 cup Green Beans
1.5 tsp Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water until fork-tender.
Drain the water and mash the sweet potato until smooth, adding a pinch of sea salt.
Pat the salmon dry and season both sides with salt and black pepper.
Heat half of the olive oil in a skillet over medium-high heat and sear the salmon for 4 minutes per side until it develops a golden crust.
Remove the salmon from the pan and add the remaining oil along with the green beans and minced garlic.
Sauté the beans for 5 minutes until tender-crisp and fragrant.
Serve the seared salmon over the sweet potato mash with the garlic green beans on the side.
