Remove chicken from the pan, let it rest for 3 minutes, then slice into thin strips.
In the same skillet, add the tomato puree, minced garlic, and herbes de Provence, simmering for 3 minutes.
Stir the roasted vegetables and sliced chicken into the sauce to coat evenly.
Garnish with fresh basil and serve immediately.
