Seared Salmon Fillet with Garlic Green Beans and Brown Rice
Pan-seared sockeye salmon served with garlic green beans and brown rice, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Sockeye Salmon Fillet
0.6 cup Cooked Brown Rice
1 cup Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Fresh Garlic
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4 to 5 minutes until the skin is crisp.
Flip the salmon and cook for another 3 to 4 minutes until the fish is opaque and flakes easily.
In a separate pan, heat the remaining olive oil and sauté the minced garlic until fragrant.
Add the green beans and a tablespoon of water, then cover and steam for 3 minutes until crisp-tender.
Serve the seared salmon over the warm brown rice with the garlic green beans on the side.
