Carne Asada Quesadillas with Guacamole
Marinated flank steak seared until juicy and tucked into a crisp whole wheat tortilla with melted Monterey Jack and creamy, lime-infused guacamole.
INGREDIENTS
5 oz Flank steak
0.5 medium Whole wheat tortilla
0.25 oz Monterey Jack cheese
0.13 whole Avocado
1 tsp Lime juice
0.5 tsp Olive oil
0.25 tsp Ground cumin
0.25 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh cilantro
PREPARATION
Season the flank steak evenly on both sides with ground cumin, garlic powder, sea salt, and black pepper.
Heat the olive oil in a heavy cast-iron skillet over medium-high heat until shimmering.
Place the steak in the skillet and sear for 3-4 minutes per side for medium-rare, then transfer to a cutting board to rest for 5 minutes.
While the steak rests, mash the avocado in a small bowl with lime juice and chopped cilantro until smooth and creamy.
Slice the rested steak into very thin strips against the grain.
Wipe the skillet clean and place the tortilla in the pan over medium heat.
Distribute the Monterey Jack cheese over one half of the tortilla and top with the sliced steak strips.
Fold the tortilla in half and cook for 2 minutes per side until the exterior is golden and the cheese is fully melted.
Slice the quesadilla into three wedges and serve immediately with the fresh guacamole.
