Herb-Crusted Salmon with Roasted Asparagus
Oven-roasted salmon topped with a fragrant herb and garlic crust, served alongside tender asparagus spears for a vibrant and nutrient-dense meal.
INGREDIENTS
7 oz Salmon fillet
1 cup Asparagus
0.5 tbsp Olive oil
1 tsp Dried parsley
1 tsp Dried dill
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 whole Lemon
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Wash the asparagus and trim off the woody bottom ends, then place them on one side of the prepared baking sheet.
Pat the salmon fillet dry with a paper towel and place it on the other side of the baking sheet.
In a small bowl, combine the olive oil, minced garlic, dried parsley, and dried dill to create a paste.
Spread the herb paste evenly over the top of the salmon fillet and drizzle any remaining oil over the asparagus.
Sprinkle the sea salt and black pepper over both the salmon and the asparagus.
Roast in the oven for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Remove from the oven and squeeze the fresh lemon juice over the entire tray before serving.
