PREPARATION
Boil a pot of salted water and cook chickpea linguine according to package directions until al dente.
Season chicken breast with sea salt and black pepper, then sear in a pan with olive oil over medium-high heat until golden and cooked through.
Remove chicken to rest, then in the same pan, sauté sliced cremini mushrooms and minced shallots until the mushrooms are browned and tender.
Add minced garlic to the pan and cook for 30 seconds until fragrant.
Slice the rested chicken into thin strips.
Toss the cooked pasta, chicken strips, and a splash of reserved pasta water into the pan with the mushrooms.
