150g Sweet Potato, peeled and cubed

PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook for 10-12 minutes until tender.
While potatoes cook, heat the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with sea salt and pepper, then place it skin-side down in the skillet.
Sear the salmon for 4-5 minutes per side until the skin is crisp and the flesh is opaque.
Remove the salmon from the pan and set aside; in the same pan, add the green beans and minced garlic.
Sauté the green beans for 5 minutes until tender-crisp and fragrant.
Drain the sweet potatoes and mash them thoroughly with the ghee and a pinch of salt until smooth.
