Pour the tomato puree and full-fat coconut milk into the skillet, whisking gently to combine into a smooth sauce.
Place the meatballs back into the sauce, reduce heat to low, cover, and simmer for 8 minutes.
Remove the lid, stir in the fresh spinach until it is just wilted, and serve immediately.
