Beef and Rice Stuffed Bell Peppers
Roasted bell peppers stuffed with savory ground beef and brown rice, simmered in a zesty tomato sauce for a vibrant, fork-tender finish.
INGREDIENTS
8 oz Ground beef (93% lean)
2 large Bell peppers
0.13 cup Cooked brown rice
0.25 cup Tomato sauce
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
0.5 tsp Onion powder
0.5 tsp Dried oregano
1 tbsp Fresh parsley
PREPARATION
Preheat your oven to 375°F.
Slice the tops off the bell peppers and carefully remove the seeds and internal membranes.
In a large skillet over medium heat, brown the ground beef until it is no longer pink.
Drain any excess fat from the skillet to keep the meal clean and lean.
Stir in the cooked brown rice, tomato sauce, sea salt, black pepper, garlic powder, onion powder, and dried oregano.
Spoon the beef and rice mixture evenly into the hollowed bell peppers, pressing down slightly to pack them.
Place the peppers upright in a baking dish and add a splash of water to the bottom of the dish to create steam.
Cover the dish tightly with aluminum foil and bake for 30 minutes.
Remove the foil and bake for an additional 10 minutes until the peppers are soft and the tops are slightly golden.
Garnish with chopped fresh parsley and serve warm.
