While the vegetables roast, season the chicken breast with dried oregano, garlic powder, and the remaining sea salt and black pepper.
Heat the remaining 0.5 tsp of olive oil in a non-stick skillet over medium-high heat.
Cook the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F.
Remove the chicken from the pan and let it rest for 5 minutes before slicing into thin strips.
Spread the hummus in a thick layer across the bottom of a shallow bowl or plate.
Arrange the roasted vegetables and sliced chicken on top of the hummus.
Finish the platter with a fresh drizzle of lemon juice for brightness.
