PREPARATION
Steam the cauliflower florets until very soft, then drain and mash with a splash of the vegetable broth and a pinch of the sea salt until smooth and creamy.
Season the chicken cutlets evenly on both sides with half of the sea salt and black pepper.
Heat the extra virgin olive oil in a large skillet over medium-high heat and sear the chicken for 3 to 4 minutes per side until golden brown and cooked through.
