Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon fillet served with garlic-sauteed green beans and nutty brown rice, finished with a squeeze of zesty lemon.
INGREDIENTS
8.5 oz Wild Salmon Fillet
0.75 cup Cooked Brown Rice
2 cups Fresh Green Beans
2 tsp Extra Virgin Olive Oil
2 cloves Minced Garlic
PREPARATION
Prepare the brown rice according to package directions and set aside.
Pat the salmon fillet dry with paper towels and season both sides with salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4 to 5 minutes until the skin is crispy.
Flip the fillet and cook for another 3 to 4 minutes until the salmon is cooked through.
Remove the salmon from the pan and set it aside to rest.
In the same skillet, add the remaining teaspoon of olive oil and the minced garlic.
Add the green beans and a splash of water, then sauté for 5 to 6 minutes until tender-crisp.
Plate the brown rice with the garlic green beans and top with the seared salmon and a fresh lemon wedge.
