Add the turkey bacon to the skillet and cook until it begins to brown and turn crispy.
Toss in the red bell peppers and sauté for 2-3 minutes until they soften slightly.
Add the baby spinach to the pan and stir until just wilted.
Lower the heat to medium-low and pour the egg mixture into the skillet.
Using a spatula, gently fold the eggs from the edges toward the center, allowing the liquid to set into soft, tender curds.
Remove from heat once the eggs are cooked through but still moist.
Garnish with freshly chopped chives and serve immediately.
