Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Trim the woody ends off the asparagus spears and place them on the prepared baking sheet.
Drizzle the asparagus with 0.5 tbsp of the olive oil and season with a portion of the sea salt and black pepper.
Roast the asparagus for 12-15 minutes until they are tender-crisp and slightly charred at the tips.
While the asparagus roasts, season the chicken breast on both sides with the remaining sea salt, black pepper, and the dried oregano.
Heat the remaining 1 tbsp of olive oil in a large skillet over medium-high heat.
Add the chicken to the skillet and sear for 6-8 minutes per side, or until the internal temperature reaches 165°F.
In the final 2 minutes of cooking, add the minced garlic to the pan and stir constantly until fragrant.
Pour the lemon juice and lemon zest into the pan, using a spoon to baste the chicken with the pan juices for 1 minute.
Plate the warm cooked quinoa, top with the lemon-herb chicken, and serve alongside the roasted asparagus garnished with fresh parsley.
