Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with crisp-tender green beans and creamy garlic mashed cauliflower, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
1 tsp Olive oil
1 tbsp Non-fat Greek yogurt
2 cloves Garlic
0.5 fresh Lemon
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
While cauliflower steams, mince the garlic cloves and set aside.
In a separate steamer or the same one, steam the green beans for 5 minutes until they are bright green and crisp-tender.
Transfer the steamed cauliflower to a bowl and mash thoroughly with the minced garlic and Greek yogurt until creamy.
Season the salmon fillet with salt and pepper on both sides.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet and sear for 4 to 5 minutes per side until the skin is golden and the fish flakes easily with a fork.
Plate the salmon over a bed of garlic mashed cauliflower with the green beans on the side.
Finish the dish with a fresh squeeze of lemon juice over the salmon and vegetables.
