Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Slice the bell peppers in half lengthwise and carefully remove the seeds and internal membranes.
Lightly brush the exterior of the pepper halves with olive oil and place them cut-side up on the prepared baking sheet.
In a medium mixing bowl, crumble the extra firm tofu using your hands or a fork until it reaches a uniform, ground-like consistency.
Add the refried beans, nutritional yeast, salsa, chili powder, ground cumin, sea salt, and black pepper to the tofu.
Mix the ingredients thoroughly until the spices and beans are evenly incorporated into the tofu crumble.
Spoon the tofu and bean mixture generously into the bell pepper cavities, pressing down slightly to pack the filling.
Bake for 25-30 minutes until the peppers are tender and the filling is heated through and slightly golden on top.
Remove from the oven and let the peppers rest for 5 minutes before serving with additional salsa if desired.
