PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
Place the diced Yukon gold potatoes on the sheet, drizzle with 1 teaspoon of olive oil, and sprinkle with half of the salt, pepper, rosemary, and thyme.
Roast the potatoes for 15-18 minutes until they start to soften and turn golden brown.
