Preheat your oven to 400°F and line a baking sheet with parchment paper.
Halve the baby potatoes and trim the woody ends off the asparagus.
Toss the potatoes and asparagus with 0.5 tbsp of the olive oil and a pinch of the sea salt and black pepper.
Spread the vegetables on the baking sheet and roast for 20 minutes until the potatoes are golden and the asparagus is tender.
While the vegetables roast, season the chicken breast with the remaining sea salt and black pepper.
Heat the remaining 0.5 tbsp of olive oil in a large skillet over medium-high heat.
Sear the chicken for 6-7 minutes per side until the exterior is golden brown and the internal temperature reaches 165°F.
Remove the chicken from the pan and set it aside on a plate to rest.
In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
Deglaze the pan by pouring in the chicken bone broth, lemon juice, rosemary, and thyme, scraping up any browned bits.
Simmer the sauce for 2-3 minutes until reduced by half, then whisk in the ghee until the sauce is glossy and emulsified.
Plate the chicken with the roasted vegetables and drizzle the warm lemon-herb sauce over the top.
