150g Potato
10g Rolled Oats
1/2 Large Egg (beaten)
100g Broccoli florets
50g Red Bell Pepper (sliced)
1 tsp Olive Oil
Garlic powder, dried oregano, salt, and pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a bowl, combine the lean ground beef, rolled oats, beaten egg, garlic powder, oregano, salt, and pepper.
Roll the beef mixture into small meatballs and place them on one side of the baking sheet.
Toss the broccoli florets and sliced bell peppers with olive oil and a pinch of salt, then spread them on the other side of the baking sheet.
