Seared Salmon Fillet with Roasted Sweet Potatoes and Green Beans
Pan-seared salmon fillet served with oven-roasted sweet potato cubes and tender green beans, finished with a bright squeeze of zesty lemon.
INGREDIENTS
7.5 oz Wild Atlantic Salmon Fillet
120g Sweet Potato, cubed
100g Fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
1 tbsp Fresh Lemon Juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss the cubed sweet potatoes with half of the olive oil and a pinch of sea salt and black pepper.
Spread the sweet potatoes on the baking sheet and roast for 15 minutes.
Add the green beans to the same baking sheet, tossing them with the remaining oil, and roast for another 10-12 minutes until the vegetables are tender and slightly browned.
While the vegetables roast, season the salmon fillet with salt and pepper.
Heat a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes on the first side to develop a golden crust.
Flip the salmon and cook for an additional 3-4 minutes until the internal temperature reaches 145°F.
Serve the salmon alongside the roasted vegetables and drizzle the entire plate with fresh lemon juice.
